 4 Apple
 4 Pear
 3 cloves Garlic
 100 Golden raisin
 10 Dried apricot
 3 Acacia honey
 3 Olive oil
 1 Nutmeg
 2 sticks Cinnamon
 1 Ginger
 2 Bay leaf
 1 Dark rum
 500 Wild rice
 Salt
 Five spice pepper

Preheat the oven to 180°C.

In a bowl, mix together all the spices (cinnamon, bay leaf, star anise, chopped ginger, nutmeg) with the acacia honey and olive oil.

Place the chicken on a work surface and brush it with the spice/honey mixture all over. Also brush the inside of the poultry.

Place the chicken in a baking dish. Add to the dish the cinnamon sticks (if you used them), the bay leaves, and the star anise that you used for brushing the chicken.

Pour the chicken stock and the glass of aged dark rum into the dish. Season with salt and pepper.

Bake in the oven for 1 hour and 30 minutes, regularly basting the chicken with the cooking juices.

20 minutes before the end of the cooking time, add the pieces of apples and pears, apricots, and raisins to the baking dish. Be careful not to crush them for a nice presentation.

Meanwhile, cook the wild rice according to the instructions on the package.

Serve with caramelized fruits and wild rice.
