A lovely visual for this brioche. A very simple shaping and a tasty brioche with a beautiful crumb.
First, dissolve the yeast in warm water. In the bowl of your mixer fitted with a dough hook, add the flour. Make a well and add the dissolved yeast. Mix. Add the sugar, salt, eggs, and softened butter cut into cubes, along with the orange flower water. Knead until the dough is well combined. Let your dough rise for about 1.5 hours until it doubles in volume.
Shaping Then degas the dough. Take a piece of dough the size of a ping-pong ball and set it aside. Divide the rest of the dough into 8 equal parts and shape these parts into balls.
Flatten each ball into a circle approximately 15 cm in diameter, and using a knife, make a cut from the center to the edge. Place a teaspoon of spread next to the cut, then cover the filling with the dough by rolling it while forming a three-tiered cone. Place the dough cone in a buttered and floured 20 cm round cake pan.
Place the pointed end of the cone towards the inside of the mold. Repeat the shaping process with the remaining dough balls and place the cones in the mold to form a flower. Place the small dough ball you set aside in the center of the cones.
Let rise for 1 hour in a warm place. Preheat the oven to 180°C. Brush the brioche with beaten egg and decorate the center ball with granulated sugar or chocolate chips. Bake in the oven for 30 minutes, monitoring the cooking.
Let it cool before unmolding the brioche. Enjoy and indulge yourself.
