A really delicious and very simple zucchini casserole. The texture and flavors are perfect!
Slice the onions, zucchini, and garlic into thin pieces. Fill a pot with water and bring it to a boil. Preheat your oven to 180 degrees. Start by slicing the onions into small pieces. Then cut the zucchini into quarters and then into small pieces. Crush the garlic.
Cook the onion and then the zucchini with garlic and bacon. Once the water reaches 100 degrees, cook the rice for 12 minutes or according to the recommended time for your rice. Then drain. Lightly brown the onion. Add the bacon and let it brown. Then add the zucchini and garlic. Cook until the zucchini is tender. Season with salt and pepper to taste. Remove from heat.
In a bowl, crack the eggs and add milk and cream. Whisk everything together.
Add the rice to the zucchini. Off the heat, add the rice to the pan with the zucchini, onions, etc. Mix well.
Arrange in a dish measuring 33x21cm x 6cm or equivalent. Place the rice mixture, zucchini, etc. in the dish. Press down lightly, then add the mixture of egg, milk, and cream. Add the cheese on top of the preparation.
Bake for 15-20 minutes at 180° according to your desired level of browning (In the photo, 20 minutes exactly). Check occasionally to ensure the cheese doesn't burn too much.
