Preheat the oven to 170 degrees. Line the inside of your bowl with parchment paper and vegetable fat.
Whisk the flour, cocoa, and salt together in a bowl and set aside. Place the butter, oil, sugar, and vanilla in the bowl of an electric mixer and beat on medium speed until well combined. Incorporate the eggs one at a time with the mixer on low speed. Add the flour mixture alternately with the yogurt (or buttermilk). Beat long enough to combine. Place the baking soda in a small dish, mix in the vinegar, and add to the batter while the machine is running.
Pour the batter into the prepared molds, place in the oven, and bake until a toothpick comes out clean, about 1 hour and 40 minutes. Let cool.
Sugar syrup: Simply boil the sugar in water until the sugar is completely dissolved. Set aside.
Using a knife, cut your cake into a rounded brain shape. Mark a dividing line in the center of the brain where the hemispheres would be split.
Pour syrup over the cake and place it in the refrigerator. (Add another layer if it doesn't hold enough to your liking).
Make "snakes" of sugar paste with a diameter between 0.5 and 1 cm. Use your knife to cut your tubes of sugar paste and position them. Leave the separation between the two hemispheres of your brain.
Cover with strawberry or raspberry coulis using a brush. It’s ready!
