Just a little almond and pistachio is enough to make me happy... But it's so good!

Ingredients
 90 Butter
 20 Butter (for the molds)
 3 Egg white
 100 Almond powder
 80 Icing sugar
 40 Flour
 2 Pistachio paste
Directions

Heat the butter in a saucepan until it turns a hazelnut color. Let it cool slightly.

Mix the powdered sugar, flour, and almond flour, then incorporate the egg whites by beating well. Next, pour in the melted butter and the pistachio paste (if needed, dilute it in a little warm milk beforehand).

Divide the mixture into molds for financier cakes or muffins. Place in the refrigerator for 1 hour.

To finish, preheat the oven to 190°C. Bake for 12 to 15 minutes for financier molds (20 to 25 for muffin molds). Allow to cool before removing from the molds.

    Very good recipe, the cakes are perfectly moist! I would gladly make them again, perhaps adding a bit of pistachio paste and reducing the amount of sugar.

    Very good Well-flavored, delicate, and melting. I served them at Christmas with a traditional selection of desserts, and they were very popular. My suggestion: I made the pistachio paste myself, and to ensure it was well-flavored, I added a little extra. As a result, I should have also added a bit more sugar.

    Mouthwatering... Just reading the recipe makes my mouth water! I'm going to make it very quickly... My suggestion: One small issue though... Where can we find pistachio paste? I looked in the baking supplies, food coloring, and cake decorations section of my supermarket and... I didn't find any... :-(

    Response to Colette and Patricia You can find pistachio paste at specialty pastry shops or in some organic stores; otherwise, you can buy it online, or you can also make it yourself from unsalted natural pistachios, sugar, and almonds. You will easily find recipes on the internet.
