Enjoy a delicious and comforting summer recipe: stuffed tomatoes served with pilaf rice. This complete dish combines the freshness of seasonal tomatoes with tasty sausage meat, all enhanced by aromatic herbs.
Cut the top off each tomato. Set aside. Hollow out the tomatoes, keeping the flesh in a bowl. Grease a baking dish and add a bit of water to prevent sticking during cooking. Place the tomatoes in the dish. Preheat your oven to 180°C.
Chop the onion, sauté it in a pan with the sausage meat. Season with salt, pepper, and add the herbs. Add a bit of tomato juice that you reserved in step 1. (Keep some juice and tomato pieces for cooking the pilaf rice.) Once cooked, stuff the tomatoes with the mixture.
To finish, place in the oven at 180°C for about 30 minutes (cooking time depends on your oven, so keep an eye on it!). Meanwhile, prepare your pilaf rice: put olive oil in a pan and add the rice. Stir a little and cover with water. Keep stirring so it doesn't stick to the pan. Once the water has been absorbed, add more. The total cooking time should last 15-20 minutes. After 10 minutes of cooking, add the remaining tomato juice as well as finely chopped tomato pieces. Season and add herbs. You can enjoy!
