Making crispy sautéed potatoes as a side dish seems straightforward, but it requires a few essential secrets to get it right! In my grandmother's recipe, I explain everything! If you love garlic, feel free to add some! They can even be prepared in the oven.

Preparation of a potato Peel the potatoes. Cut them into even cubes. Submerge the potatoes in cold water. Leave for 30 minutes. Drain them and wipe them with a clean, dry cloth. Heat the oil in a large skillet over high heat. Add the potatoes.
Cooking sautéed potatoes. Let cook and brown for 15 minutes, turning very often. Add finely chopped shallot. Season with salt and pepper. Reduce the heat and let cook for another 5 minutes.
At the end of cooking, add cold butter to make the sautéed potatoes crispy. Once cooked, sprinkle with chopped fresh coriander or parsley.
