 30 Heavy cream
 30 Powdered sugar
 300 Strawberry
 6 Basil
 1 clove Vanilla
 2 Sugar
 6 Raspberry
 1 Pistachio
 1 Sliced almond

Preparation of the cheesecloth Place the cheesecloth in a strainer, which is placed over a bowl. Cover everything with plastic wrap and place a weight (not too heavy) on top to help the liquid drain. Store in a cool place for at least 2 hours.

Preparation of whipped cream: Pour 300 ml of heavy cream into a well-chilled bowl. Place it in a sink filled with ice water and start whisking vigorously and continuously. When the traces of the whisk start to appear on the cream, add 30 g of powdered sugar gradually and continue whisking. The whipped cream is ready when, upon removing the whisk, the cream forms a small peak like a bird's beak.

Preparation of the strawberries: Cut about 300 g of washed and hulled strawberries into small cubes. Place in a bowl. Cut a few leaves of basil into fine strips and add to the strawberries. Sprinkle with 2 tablespoons of powdered sugar and mix well.

Rest Cover with plastic wrap and refrigerate for 2 or 3 hours.

Finishing the whipped cream Cut a vanilla pod lengthwise and remove the seeds with a knife. Add the vanilla seeds to the whipped cream and gently mix them into the cheese with a spatula.

Service You can present the dessert in several ways: 1/ using a cookie cutter, form a small dome. Arrange strawberries all around, along with a few raspberries on top and some roasted pistachio pieces. 2/ Place the strawberries at the bottom of a glass, add a few spoonfuls on top and sprinkle everything with toasted sliced almonds.

    I made this recipe this week; we were 6 people, so I increased the quantities a bit. I prepared this dessert the day before, making sure to drain the cheese well. I presented it in individual plates, but I had put the mixture in rings that I removed just before serving, being careful, but there were no problems, and I arranged chopped strawberries around it. The result was PERFECT; everyone enjoyed it. I'm making this dessert again for my next gathering.

    A true success The star dessert of this summer. Tested at several gatherings: there is never enough! My suggestion: I didn't use basil for taste, and I make a raspberry or red fruit glaze with gelatin to beautifully and deliciously cover the creamy base.

    You should add the cheese to the whipped cream once it has finished draining and when you have whipped your cream to a stiff peak!

    Highly recommend I made this recipe just this afternoon, and it was a complete success! On the advice of a friend, I let the cheese drain overnight and I preferred to mix the vanilla into the cheese rather than into the whipped cream; I found that more convenient. Aside from the step of making the whipped cream, which can be tricky for some (though if you chill the bowl beforehand, it whips up very easily), this recipe is very easy, relatively quick (cutting the strawberries can take some time if you want them to be uniform), very fresh and light; in a word: very good! My guests even told me they preferred this to plain whipped cream, and even those who are usually reluctant to whipped cream enjoyed it. Ideal for summer desserts, everyday meals, or fancy occasions! My suggestion: Personally, next time I will use a bit more strawberries, about 400 g for the given amounts, because I have some mousse left but no strawberries to enjoy it with, and it’s very frustrating when you’ve tasted such a delicious recipe.
