One can eat indulgently, healthily, and easily. This side dish made with potatoes and spinach proves it. A dish enhanced by turmeric which adds more flavor.
Peel the potatoes, wash them, and cut them into cubes. Peel the onion and finely slice it. Peel the garlic clove and chop it. Wash the spinach and remove the stems.
In a pot, heat 1 tablespoon of olive oil. Add the potatoes, salt, onion, and garlic. Cook for 4/5 minutes over low heat, and add enough water to cover. Let it cook for 15/20 minutes, until the potatoes are well cooked. Drain the potatoes.
In a skillet, heat the remaining oil. Add the cooked potatoes with the onions, a little turmeric and salt, and let cook until the potatoes lightly color. Finally, add the spinach and allow to cook for 1/2 minute for the spinach to wilt. Add pepper and additional turmeric to taste.
To finish, serve as a side dish or as a vegetarian main course.
