Strawberries are starting to appear at the market, and since my daughters are still on vacation, we made cookies. They are easy and quick to make, and you can prepare them with your children. I can tell you that the snack was a real treat! These cookies are soft on the inside, with a slightly crispy crust due to the brown sugar. And the pieces of strawberries provide a pleasant fruity smell and taste.
Wash, dry, and hull the strawberries. Cut them into small pieces. Place them in a bowl, add the cornstarch, and gently mix to coat them.
Preheat the oven to 180°C (or 200°C for conventional heat).
In the bowl of a food processor, blend the flour, sugar, baking powder, and salt for a few seconds. Add the cold butter cut into pieces and blend again until you achieve a sandy mixture.
Pour this mixture into a bowl, add the vanilla extract and the cream, and mix by hand until a slightly sticky, homogenous dough ball is formed.
With very slightly damp hands, form a dough ball the size of a tangerine, then flatten it to obtain a round shape about 1 cm thick. Add a few pieces of strawberries inside, fold the edges of the dough over, and reshape it into a ball. Flatten it a bit more and place a few pieces of strawberries on top, pressing them into the dough.
Place the cookie on a baking sheet lined with parchment paper.
Do the same for the remaining cookies, making sure to space them out on the baking sheet as they will spread while baking.
At the end, sprinkle the cookies with brown sugar.
Bake for 10 minutes or until they are lightly golden.
To finish, let cool for 15 minutes, then place them on the serving platter and sprinkle with powdered sugar to taste. You can find the detailed recipe on my blog, as well as many other delicious recipes.
