Swiss chard from the garden is a delight in this vegetable sauté where I added the first organic tomatoes of the year found at the market...
Clean the Swiss chard. Cut off the bottom of the stems. Wash and dry them. Cut them into regular pieces of about 3 cm, including the stems and leaves.
Peel and crush the garlic in a mortar or with a garlic press. Peel the onion and slice it into thin strips. If using fresh tomatoes, wash them, cut in half, remove the seeds, and dice. Peel the potatoes, wash them, and then cut into cubes. Drain the olives and then slice them.
Heat a bit of olive oil in a skillet over medium heat. Add the onion, garlic, and diced bacon, and cook until they are well browned, for a few minutes. Then add the chopped greens and mix well. Season very lightly with salt (the bacon and olives are already salty) and add pepper.
Then pour in the tomatoes and mix again. Cover the skillet and let it cook over medium heat for 25 to 30 minutes, stirring regularly (add a cup of water if it sticks a bit). At the end of cooking, add the olives.
To finish, serve the chard with tomatoes, olives, and bacon with a bit of oregano, and accompany with white meat or poultry. ENJOY YOUR MEAL!
