Preparation of the potatoes Peel and wash the potatoes. Dry them well with a clean cloth.

Preparation of the pot In a cast iron pot, add the oil, butter, and margarine, and heat over medium-high heat.

Cooking: Place the potatoes in the cast iron pot and brown them on all sides.

Salt, pepper, and add finely sliced onions, a sprig of thyme or dried thyme.

Lower the heat under the pot and place a diffuser. Let it cook for about 1 hour.

    The name is not correct because here, it's more about roasted potatoes, a different method. For the "pan-fried potatoes," they have already been pre-cooked by steaming or boiling, then cooled, sliced into rounds, and then sautéed.

    Slow cooking potatoes A good idea is to sear them and then place them in a pot with Provençal herbs. However, 60 minutes may be a bit long; 45 seems enough to me. My suggestion: adding a bit of curry gives a different flavor.

    Made with leftover steamed potatoes I always cook extra steamed potatoes one day and prepare them like this the next day. My suggestion: I cook them cut in half with half olive oil and half butter, finishing with a bit of chopped parsley on top. To be served with all meats and even fried eggs. Excellent with a slice of pâté and roasted apple slices.

    Advice I think it would be wiser to cook the potatoes over high heat rather than low heat, as this would allow for faster cooking. My suggestion: Add thin slices of onion or shallots to the skillet.

    Simple and good Very good (the kids love it) and within the reach of all beginners. My suggestion: To avoid using too much fat and to prevent the potatoes from sticking to the bottom of the pot, I quickly rinse them under very hot water before drying them thoroughly.
