Peperonata, from the Italian word for "sweet peppers," is like a ratatouille of peppers or a typical pepper dish from Sicilian cuisine. It is served hot and can accompany other vegetables like potatoes or meats.
Preparation of the peppers: Preheat the oven to 160°C. Place the peppers in a baking dish with a little water at the bottom and bake for about 30 minutes, until the skin starts to blister. Let them cool, then peel them. Cut them in half and remove the stem, seeds, and membranes. Slice the peppers into strips.
Cooking the peppers Chop the onion Sauté it in a pot with olive oil. Once it is well browned, add the peppers and let them cook for 15 minutes. Finally, add the peeled tomatoes cut into quarters, the garlic clove, salt, and pepper. Cover the pot and let it simmer on low heat until the vegetables are perfectly tender (about 15 minutes).
Serving and presentation At the time of serving, garnish with basil leaves.
