Enjoy this recipe for pea cream and crumble that is detox and light. This easy-to-prepare recipe is perfect for a gourmet appetizer. Tip: You can cook the peas in sparkling water to ensure they retain a nice color!
Grate the cheese and mix it with the flour, softened butter, and almond flour.
Spread this crumble mixture in an oven-safe dish and bake for 10 minutes at 200°C.
Meanwhile, cook the peas in boiling salted water for 10 minutes.
Break the crumble mixture with a fork and place it under the broiler for 5 minutes. Break it again with a fork and set aside.
Drain the peas, then blend with the milk, cream, salt, and pepper. Strain through a sieve, taste, and adjust the seasoning.
Serve very hot accompanied by a crumble and a few chopped leaves of coriander or chervil.
