 125 Sugar
 125 Icing sugar

 8 Egg yolk
 250 Sugar
 250 Butter

In a mixing bowl, whip the egg whites until stiff, gradually adding the granulated sugar.

Sift the powdered sugar and add it to the whipped egg whites with a spatula.

Place in a piping bag and form circles of meringues.

Bake for 2 hours.

Then prepare your buttercream by heating the sugar with water until it reaches 121°C.

In the bowl of your food processor, beat the egg yolks. When the sugar syrup is cooked, pour it over the egg yolks and mix until completely cooled.

Then add the softened butter in pieces, whisk to obtain a firm cream. If you wish, this is the moment to add praline, vanilla, or other flavorings to enhance your cream.

To finish, take a meringue circle, place cream on top, cover with a second circle, and coat with buttercream. Decorate with cocoa, sliced almonds, or chocolate shavings, according to your taste.
