 2 Leek
 2 Butter
 480 Dumplings of the Dauphiné A.O.P
 2 Crushed walnut pieces
 40 Heavy cream
 Salt
 Freshly ground black pepper

Preparation and cooking of leeks Wash and slice the leeks. Sauté the leeks in a pan with a knob of butter, covered, for 5 minutes. Add 200 ml of cream, season with salt and pepper, and add half of the crumbled blue cheese. Bring to a boil.

Preparation of the gratin Preheat the oven to 200°C (fan setting 6-7). Grease a baking dish. Spread a first layer of pasta at the bottom of the dish. Pour a third of the leek mixture over the pasta, then sprinkle with a handful of crushed nuts. Cover with another layer of pasta and repeat the process two more times. Finish with a final layer of pasta.

Add the topping Drizzle with the remaining cream and crumble the rest of the blue cheese on top, then add the remaining walnuts.

Bake for 15 minutes until golden. Serve hot.
