A good recipe for a king cake with red fruits. If you love fruity desserts and the acidity of raspberries that pairs wonderfully with the flaky pastry, this recipe is for you!

Ingredients
 130 Almond powder
 130 Butter
 130 Raspberry
 2 Flour
 1 Egg yolk
 130 Sugar
 1 Bean or white bean for the king or queen

In a mixing bowl, mash 130 g of butter with a fork. Add 130 g of sugar and mix. Pour in 130 g of almond flour and 2 tablespoons of flour. Gently mix. Add the raspberries (thawed previously) and mash again.

Roll out the first puff pastry on the baking sheet. Spread the contents of the bowl in a circle at the center of the pastry, taking care not to get too close to the edges. Spread a little. Remember to hide the bean near one edge to reduce the chance of encountering it when serving.

Cover with the second dough and seal your pastry by rolling the edges well. Using the tip of a knife, draw the decorations of your choice by gently pressing on the pastry to create a grid pattern.

Beat an egg yolk and brush it onto the dough. Bake for 30 minutes in the oven at 180°C.
