A beautiful berry tart made with garden fruits, perfect for welcoming your loved ones for an afternoon snack or serving as a dessert.
For a 20 cm round cake - serves 6 people
In a mixing bowl, whisk the egg, sugar, and salt.
Add the flour all at once and mix with your fingertips.
Add the softened butter and finish kneading the dough by hand.
Form a ball and let rest in the refrigerator for 30 minutes to 1 hour.
After an hour, roll out the dough in the pan. Prick the bottom of the crust with a fork. Blind bake it.
Place a sheet of parchment paper and dry beans, rice, etc. on the tart so that it doesn't brown too much.
Cooking for 20 to 30 minutes at 180° according to your oven.
Let cool on a rack. Using a grater, trim the edges of the tart for a better appearance.
To finish, once cooled, fill the bottom of the pastry with pastry cream and neatly arrange your fruits on top, garnishing with a few mint leaves.
