Chocolate...chocolate and more chocolate. Just dark.
In the bowl of a mixer, combine the almond powder, honey, and whole egg. Add the powdered sugar. Add the egg yolks. Whisk the mixture, allowing it to rise for about 30 minutes.
Chop the dark chocolate. Then fold in the flour, cocoa powder, and warm melted butter into the well-aerated mixture. Mix with a spatula and add the chopped chocolate.
Whip the egg whites until stiff peaks form.
Incorporate the beaten egg whites into the mixture. Pour the batter into a loaf pan lined with butter and cocoa powder. Bake in a preheated oven at 180° C for 45 minutes. Check for doneness.
To finish, unmold and let cool. Melt the dark chocolate and add cocoa butter. When your icing is ready, pour it over the cake and let the chocolate set. You can use a ready-made icing. For decoration, use dried fruits, almonds, raisins, or nuts.
