Today, I propose to you crunchy-soft orange spiral cookies. They are delicious, cute, and indulgent. You wouldn't even guess, it's a vegan recipe, without any animal products. These cookies are made with simple and economical ingredients. They are easy and quick to make. Your children will be happy to help you, as the preparation is quite fun. The sugar on top creates a little crispy crust, and inside, they are soft. Don't let them brown too much, so they stay soft inside.
Prepare the dough. In a bowl, whisk together the orange juice, sugar, vanilla sugar, salt, and baking soda until the sugar is dissolved. The baking soda will react with the acidity of the orange juice, which is normal. Add the oil and mix to incorporate. Then gradually add the flour, mixing first with the whisk and then kneading by hand until a soft, smooth, and pliable dough is obtained.
Preheat the oven to 200°C, static heat.
Prepare the cookies. Take a small piece of dough the size of a large walnut or a small tangerine (about 40 g). First, shape it into a ball, then roll it into a log and twist it into a spiral. Dip the top part of the cookie in sugar, which will give it a slight crunchy crust. Place on a baking sheet lined with a silicone mat or parchment paper, spacing them out slightly. Repeat the procedure until the dough is used up.
Bake in the oven for about 15-17 minutes or until they are lightly golden.
