Recipe for Cookies with Breadcrumbs and Cranberries

If you have stale bread, you can definitely make breadcrumbs or croutons for your winter soup, which is always welcome! And you can also make cookies!

Ingredients
 60 Soft butter
 40 Hazelnut powder
 40 Brown sugar
 1 Baking soda
 2 Egg
 40 Cranberries

Blend the bread into fine crumbs.

In a mixing bowl, place the breadcrumbs, softened butter, brown sugar, and baking soda, and mix.

Add the hazelnut powder and mix.

Add the 2 whole eggs and mix.

Add the cranberries and mix.

Using 2 teaspoons, form balls and place them on a parchment paper. Bake in a preheated oven at 180°C for 10 minutes. Let cool on a wire rack.

To finish, note: the cookie being quite dry with the breadcrumbs, you can add more cranberries. I think that dry brioche instead of dry bread would be even better!
