This cold basil tomato soup is the perfect starter for a summer meal. It's a dish I have tested with all the fresh produce from the garden.

 2 Ripe tomatoes (beefsteak or Marmande type)
 6 cloves Garlic
 12 Basil
 4 Olive oil
 1 pinch Espelette pepper
 Salt
Directions

Wash, then peel and seed the tomatoes. Place them in a blender with all the other ingredients and blend until smooth.

Place in the refrigerator for a minimum of 2 hours.

To finish, serve in soup plates, bowls, or mini tureens and garnish with a basil leaf.

    Very good The taste is very successful. I had peeled the tomatoes well, but not de-seeded them, and that was a mistake; despite blending, there were still bits of seeds. The texture was also quite strange, a bit grainy, and it separated into two: the puréed flesh and some water. But it might have been due to the variety of tomato I used. My suggestion: Take the time to de-seed the tomatoes; if the texture separates, perhaps try filtering or binding it with a touch of fresh cream.

    The taste is great Super, but oops! Mine has nothing to do with a cream soup... It might be due to my mixer (I don't have a blender), but it's really good, thank you. My suggestion: I used a little less garlic (3 cloves) to my husband's despair, but my taste buds were delighted!

    Quick and easy Really fast and convenient. My suggestion: I didn’t peel or seed the tomatoes to save even more time.
