 350 Cherries from our regions
 250 Ricotta
 180 Almond powder
 150 Sugar
 40 Cornstarch
 1 Baking powder
 3 Eggs
 ½ Vanilla extract
 Butter and flour for the mold
 Powdered sugar for serving

Preheat the oven to 160°C (320°F). Wash, dry, and pit the cherries. Grease and flour a large rectangular baking dish.

In a mixing bowl, whisk together the almond flour, cornstarch, and baking powder. In another container, whisk the eggs with the sugar. Add the ricotta and mix until you have a smooth mixture.

Incorporate the almond flour-starch mixture, then add the cherry brandy, vanilla extract, and finally the cherries.

Finally, distribute the mixture in the mold. Bake and cook for 40 to 45 minutes. Let cool slightly before unmolding. Dust with powdered sugar at the time of serving.
