Recipe for Caprese Cake in the Style of a Chef

I tested the Torta Caprese, an ultra-light chocolate dessert. Straight from Capri, it's the perfect treat to enjoy gluten-free.

 200 Ground almond
 200 70% cocoa chocolate
 150 Light brown cane sugar
 150 Butter
 5 Egg
 1 pinch Salt
 Icing sugar

Preheat the oven to 170°C on the fan setting.

Preparation of the chocolate-butter mixture Break the chocolate into small pieces. Then, pour it into a mixing bowl. Cut the butter into pieces and add it to the chocolate. Finish with a pinch of salt. Melt this mixture in a double boiler until smooth and homogeneous.

Preparation of the dough Break the whole eggs and pour the sugar into the bowl of your mixer. Whisk for 10 minutes: you should get a fluffy mixture. Then, incorporate the melted butter-chocolate mixture and mix again. Add the almond powder and continue whisking for 3 minutes.

Cooking Place parchment paper at the bottom of a cake pan. Pour in the mixture. Place it in the oven and bake for about 20 minutes, until the cake is cooked through.

Cooling and serving Don't unmold the cake right away. Let it cool in its pan. Then, carefully unmold it and place it on a nice serving plate. All that's left is to dust your dessert with powdered sugar.
