An apple pie made with a delicious homemade sweet crust. Perfect for a comforting snack when paired with a scoop of vanilla ice cream.

Making sweet pastry dough.
 200 Flour
 120 Butter
 30 Sugar
 10 Vanilla sugar
 1 Egg yolk
 45 Water
 1 pinch Salt
Preparation of the filling
 130 Apple compote

 15 Brown sugar
Directions

Start by making the dough by pouring flour, white sugar, and vanilla sugar into a large mixing bowl, along with a pinch of salt. Mix everything together.

Add the butter cut into large pieces and mix it into the previous mixture. Use the palm of your hand for this. The goal is to achieve a texture similar to that of a crumble.

Add the egg yolk and water, then mix again with your hands to obtain a smooth dough. Form a ball, cover the bowl with plastic wrap, and then place it in the refrigerator for 30 minutes.

In the meantime, peel the apples and cut them into slices.

Take the dough out of the refrigerator and roll it out thinly in a tart pan. Preheat your oven to 200°C and bake the dough for 10 minutes to blanch it.

On the crust, generously spread apple sauce. Then cover with slices of apples to create a beautiful rosette.

Cut small pieces of butter and place them all over the pie. Sprinkle with brown sugar.

To finish, cook for 50 minutes until the apples are very soft. Let cool slightly and serve with a scoop of vanilla ice cream.
