Recipe for Almond Flour Shortbread Cookies

For a crunchy, indulgent snack to enjoy with a good coffee or tea, or even for breakfast, these cookies are just amazing!!

Ingredients
 350 Flour
 50 Almond powder
 1 Egg
 120 softened butter
 100 Powdered sugar
 1 Vanilla sugar
 10 of oil
 1 Baking powder

Mix the butter with the powdered sugar and vanilla sugar until the mixture is creamy. Add the oil and the egg and mix well.

Pour the ground almonds, as well as the flour and baking powder, gradually into the previous mixture. Make small balls and place them on a baking sheet lined with parchment paper.

Lightly flatten the balls with the back of a fork and bake in a preheated oven at 180°C for 10 to 15 minutes.

To finish, let cool on a rack before enjoying!!
