Recipe for a thin tartlet with fresh goat cheese

Why not serve cheese in a different way? For example, by offering it as a tart. Here I chose a fresh goat cheese flavored with fresh mint. I sweetened it with vanilla sugar to give it the appearance of a dessert.

 1 fresh goat cheese
 1 mint leaves
 4 Vanilla sugar
 4 toasted sesame seeds
 4 hazelnuts
 2 hazelnut oil

Cut 8 rounds from the puff pastry using a cookie cutter. Place them on a baking sheet, sprinkle them with sesame seeds. Cover with a second baking sheet and place a weight on top.

Bake in the oven at 180° for 15 minutes. (When the bottoms are lightly golden, remove from the oven) Let cool.

Finely chop the fresh mint leaves, and mix them with the cheese and 4 tablespoons of vanilla sugar.

To finish, top 4 tartlet bases with goat cheese to a thickness of 1 cm. Place the second base on top, garnished with a toasted hazelnut.
