Pumpkin and orange muffins, truly a delight. The texture is moist and delicately flavored with orange, with the surprise of small pieces of candied orange.
Peel and cut the pumpkin into cubes. In a pot of water, cook the pumpkin. Mash it into a puree. Set aside.
Zest the orange and squeeze it. In a saucepan, add the juice and zest with the sugar, and simmer for 10 minutes on low heat. Set aside.
To finish, preheat the oven to 180°C. In a mixing bowl, combine all the ingredients with half of the candied peel. Pour the mixture into muffin molds. Top with the remaining candied orange peel. Bake for about 30 to 40 minutes, depending on your oven.
