A jar of peanut butter at the back of the cupboard, apples in the garden... It makes for an ideal snack for the whole family!
Preheat the oven to 180°C.
In a bowl, mix the flour, sugar, salt, and baking powder.
Incorporate the peanut butter and the egg. Mix gently to avoid lumps. Gradually add the milk while continuing to mix.
Incorporate the peeled apple cut into small cubes. Set some aside for decoration.
Fill the muffin molds (a silicone tray with 6 cavities for me. So two batches!) three-quarters full and sprinkle with the reserved small dice of apple.
To finish, place in a preheated oven for 20 to 25 minutes (depending on the oven's power) at 180°C. The muffins should be well risen, lightly golden, and firm to the touch. Remove from the pan while warm and enjoy.
