What to do with the garden peaches to celebrate the season? Here is a super original charlotte with peach and orgeat syrup. The acidity of the peach pairs perfectly with the sweetness and roundness of the orgeat syrup. And on top of that, there is zero fat in this dessert, allowing you to indulge while aligning with your back-to-school efforts!
Soak the gelatin in cold water to soften it. Blend the peaches with 100ml of syrup. Place a quarter in a saucepan and heat. Add the gelatin and mix. Then add the remaining peach puree and syrup. Set aside and let cool for 60 minutes.
To finish, whip the egg whites until stiff peaks form and gently fold them into the previous mixture with a spatula. Dip the ladyfingers in 100ml of diluted syrup and place them in a mold, then pour in the peach mousse. Cover with ladyfingers and let it cool for 4 hours. Decorate the top with a few peach slices.
