A mutabbaq is a delightful culinary discovery that comes from the Middle East; here it is a pastry made with sheep's cheese and sugar syrup.

Ingredients
 250 Ricotta
 125 Fresh goat cheese
 10 Rectangular sheets of phyllo dough
 70 Melted butter
 140 Sugar
 5 Water
 2 Lemon juice
 Coarsely chopped unsalted pistachios
Directions

In a bowl or other container, mix the ricotta and sheep cheese. Set aside.

Then cut the sheets of filo pastry as shown in the video. (That is, at least 4 cm from the center to obtain two rectangles of different sizes. Brush the smaller parts of the filo sheets with melted butter and stack them as you go.

Spread the cheese filling evenly over the entire surface. Brush the remaining sheets and stack them in the same way. Place this second rectangle on the cheese and fold over the sides like a turnover, tucking them underneath the first layer of pastry to prevent the cheese mixture from leaking out during cooking. Brush with the remaining melted butter.

Make regular cuts on the pastry, taking care not to pierce the first layer. Bake for 25 minutes in a preheated oven at 230°C.

Upon removing from the oven, drizzle with a syrup made from water, sugar, and lemon juice. Sprinkle with roughly crushed pistachios, and enjoy, it’s absolutely delicious. This dish can be prepared the day before and baked at the last moment.
