Mashed Pumpkin with Orange and Pecan Nuts Recipe

A beautiful squash brought from the organic garden, which inspired me to make this mash. I found the flesh of this lovely orange gourd delicious! And the pairing with the orange fruit is just fantastic. This mash can be served to our little ones (without the pecans of course!) because the sweet flavor will surely please them!

Ingredients
 800 Flesh of a large organic pumpkin.
 2 Organic rosemary
 Coarse salt
 1 Organic orange
 40 Butter
 80 Pecan nuts
 Pepper

Cut the pumpkin in half. Remove the seeds (do not throw them away; clean them and keep them to sow in the spring or to roast for a snack or to sprinkle on soups). Peel both halves.

Cut the flesh into cubes. Boil water in a pot, add salt, then toss in the pieces of squash along with the rosemary sprigs. Let simmer for 15 minutes (you can also cook in the microwave for 7 minutes with salt and rosemary). Drain in a fine sieve.

Wash, dry, and zest the organic orange. Cut it in half and squeeze to extract the juice. Return the pieces of pumpkin to the pot with the juice and the zest of the orange. Cook, stirring, for 5 minutes over low heat until dried out.

To finish, incorporate the butter and mix. Adjust the seasoning if needed. Garnish with pecan halves and serve hot. Enjoy your meal!
