Today I offer you a fig and nut cake. It is very easy and quick to make, and you don't even need to use a mixer, plus it contains only simple ingredients that are accessible to everyone. The figs can be substituted with other fruits, and the nuts can be replaced by hazelnuts or almonds. It's up to everyone's preference, depending on taste and available ingredients.
Preheat the oven to 180°C, static heat.
Grease a 22*22 cm square mold or line it with parchment paper.
In a bowl, whisk the eggs with the sugar and vanilla sugar.
Add the oil and mix again to incorporate it. Then do the same with the yogurt.
Add the flour and baking powder, and mix until a smooth consistency is achieved.
Pour the batter into the mold and spread it evenly.
Remove the stems from the figs and cut them into small pieces (into 8 for me).
Spread the figs over the entire surface of the dough, placing them cut side up. Sprinkle with the nuts.
Bake for 50-60 minutes or until a wooden skewer comes out clean. Keep an eye on your oven, as every oven cooks differently.
To finish, let cool. Dust with powdered sugar before serving.
