A simpler and faster recipe than the traditional version, yet still delightful! You’ll almost feel like you’re by the old port... Peel the onions and finely chop them. Peel, wash, and slice the leeks. In a pot, sauté the onions and leeks in olive oil for about ten minutes.
Peel the tomatoes after blanching them, then cut them into cubes. Thinly slice the garlic cloves.
Add the tomatoes and garlic to the pot with the onions. Cook for about 10 more minutes on low heat, stirring regularly. Peel the potatoes, wash them, dry them, and cut them into similar sizes, then add them to the pot. Add the white wine and saffron. Let it cook for about 10 minutes on low heat.
Cut the fish into large pieces. Add the pieces of fish, shrimp, and mussels to the pot. Add pepper and the bay leaf, do not add salt as the cod is already salted! Cover with about 1 liter of water.
Close the pot and let it cook for about 15 minutes after the whistle starts. After 15 minutes, open the pot; if the potatoes are not cooked, put it back on the heat and let it simmer gently for a few more minutes until the potatoes are cooked.
To finish, adjust the seasoning with salt. Serve hot with toasted bread spread with a spicy sauce and/or rubbed with garlic and grated cheese.
