Coconut and Peanut Butter Cake Recipe

A moist and easy-to-make coconut cake.

Ingredients
 100 Peanut butter
 180 Flour
 6 Milk
 100 Semolina sugar
 3 Egg
 1 Baking powder
 100 Grated coconut
 Powdered sugar
Directions

Preheat the oven to 180°C. Soften the peanut butter in a bowl and whisk it with the sugar until creamy. Add the eggs one at a time, mixing well after each addition. Add the flour, baking powder, milk, and shredded coconut. Mix well.

Butter and flour a cake mold. Pour the batter into it. Sprinkle the top of the cake with the tablespoon of shredded coconut.

Bake the cake in a medium oven for about 35 minutes.

To finish, unmold after removing from the oven. Place the cake on a wire rack and let it cool. Dust with powdered sugar.

    Yum yum It's not really light, but it’s so good! My suggestion: I put the milk in first with the peanut butter to soften it more easily.

    Chocolate Chips I made it for an American-themed evening with friends and I chose to actually replace the coconut with diced dark chocolate... and we enjoyed it! Indeed, the peanut butter makes the cake a bit dry, but the chocolate balances it out and the two combine very well.

    Response Hello Audrey, I think the coconut can be easily replaced with 80 g to 100 g of chocolate chips. Could you let me know the result obtained? Having other opinions and suggestions is very constructive. Thank you.

    Too dry Good recipe. Nice flavor for those who like coconut. However, the consistency is dry. An essential accompaniment with a hot drink. My suggestion: A little extra milk... or separate the egg yolks and whip the egg whites for more softness.

    Good but very dry and tough, it needs to be soaked in a hot drink.
