Preheat the oven to 180°C.
In a large bowl, mix the flour with coconut sugar, cocoa powder, baking soda, baking powder, and salt.
In another bowl, whisk the eggs with the cottage cheese, milk, oil, and vanilla extract.
Make a well in the center of the dry ingredients and pour in the liquid mixture. Mix gradually until a smooth texture is achieved.
Divide your batter into the greased and floured muffin molds. Set aside in the refrigerator.
For those who wish to make the topping: in a bowl, roughly mix the oat flakes with the sugar and chocolate chips.
Sprinkle this preparation on top of the muffins.
Bake for about 15 minutes. Enjoy warm or cold!
To finish, Chef's tip: Feel free to add a touch of cinnamon if you like. You can also replace 50g of flour with shredded coconut.
