If you have overripe bananas in your fruit basket, I suggest using them to make a cake. A large and delicious cake, to share with family or friends. It is very moist, thanks to the cream. In terms of flavor, it is enriched with chocolate chips and nuts and scented with cinnamon. Perfect for a snack or a gourmet breakfast.
Preheat the oven to 150°C (or 170°C for static heat). Butter a flan mold that is 18 cm in diameter and 10 cm in height.
In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
In another large bowl, mix the softened butter with the sugar and brown sugar.
Add the eggs one by one and mix a little between each addition to incorporate them.
Add the mashed bananas and the thick cream, and blend a little more.
In 2-3 batches, add the dry ingredients and blend at low speed until a smooth texture is obtained.
In a bowl, mix the chocolate chips, chopped nuts, 50 g of sugar, and cinnamon.
Cover the bottom of the mold with 1/3 of this mixture. Pour half of the batter on top. Sprinkle again with 1/3 of the filling. Then pour the remaining batter and finish with the filling.
Bake for 60 minutes or until a knife inserted comes out clean.
Finally, let cool, then unmold and dust with powdered sugar before serving.
