Here's how to prepare Baklava with brick pastry, to change from puff pastry and filo dough. It's a quick recipe for your sweet touch during Ramadan or Eid.
In a well-greased 60 cm diameter aluminum tray, layer 7 sheets of pastry, brushing each one with melted butter as you go.
Garnish the surface with the mixture of ground almonds, sugar, and cinnamon, smoothing it out. Sprinkle 2 tablespoons of orange blossom water over this mixture. Cover with the last 5 buttered and layered sheets, folding the edges inward to seal.
Score deeply with a knife to create diamonds, then pierce them with whole blanched almonds. Drizzle the entire surface with 2 or 3 tablespoons of butter.
To finish, bake in the oven at 180°C for about 45 minutes (but keep an eye on it starting at 30 minutes). Once out of the oven, drizzle the cake with melted honey mixed with 1 tablespoon of orange blossom water. Let it rest for 24 hours, then cut the baklavas and place them in lined cups.
