I am diabetic but have a sweet tooth, so I am always looking for tips to lighten my treats.
Preheat the oven to 180°C.
In a mixing bowl, whisk or mix the eggs and sugar, then add the flour, almond powder, and baking powder.
Melt the butter and add it to the batter, then incorporate the yogurt.
Once the mixture is smooth, add the chopped peaches and the handful of raspberries. Gently mix to avoid damaging the fruits.
Pour the mixture into a greased and floured loaf pan.
Bake in the oven for about 40 minutes. (the time may vary depending on the ovens)
Wait for the cake to cool before removing it from the pan.
Finally, the peaches can be replaced by nectarines or plums. The yogurt can be replaced with the same amount of unsweetened fruit puree.
