Here is my recipe for green cabbage and celeriac velouté, a creamy soup with a delicate flavor. The recipe is very easy to make in a cooking machine, for a quick and light evening meal.
Cut the cabbage into strips and blanch for 5 minutes. Drain and set aside. Peel and dice the celery and the potato.
Put the duck fat in the bowl of the mixer with the onion sticks and start the sauté program.
After that, add all the vegetables along with the broth cubes, cover with water, and start the creamy soup program. 5 minutes before the end, add the cream cheese.
To finish, serve hot with some shavings of parmesan, a handful of chili flakes, and cilantro leaves.
