I tested this pear cake recipe. A generous and comforting dessert that combines juicy pears and almonds, perfect for any occasion.
Preparation of the dough: Start by preheating your oven to 180°C. In a bowl or the bowl of a stand mixer, beat the eggs and brown sugar with a whisk until the mixture becomes slightly frothy and lightens in color. Then add the butter cut into small pieces and mix with a spatula until it is well incorporated into the mixture. Next, add the flour, almond powder, and baking powder, and mix until you obtain a smooth and homogeneous dough.
Preparation of the pears and the mold. Generously grease your mold to prevent the cake from sticking after baking. Sprinkle sliced almonds on the bottom and sides of the mold for a crunchy touch. Pour the batter into the mold. Arrange the cubes of peeled and cored pears evenly on the batter. Finally, generously sprinkle homemade vanilla sugar over the pears to give them a deliciously fragrant flavor.
Baking Place the pan in the preheated oven and let it bake for about 30 minutes, or until the cake is golden and fully cooked. Check for doneness by inserting the tip of a knife into the center of the cake: it should come out clean.
Cooling and Unmolding Once the baking is finished, remove the cake from the oven and let it cool in the pan for a few minutes. Then, gently unmold the cake and transfer it to a wire rack to cool completely.
Before serving, generously sprinkle powdered sugar over the pear cake. It is now ready to be enjoyed and appreciated by all your guests!
