A delicious comforting baked casserole with pumpkin, potatoes, and goat cheese. A hearty dish to delight the whole family. If you wish, you can add bacon and use cream instead of milk.
Preparation of the vegetables. Peel the potatoes, wash them, and cut them into large cubes. Peel the onion and finely slice it. Peel the garlic and chop it. Wash the squash (the skin is edible, but wash it well and if possible, organic is better), and cut it into large pieces.
Cooking the vegetables In a pot, add the nut oil, sliced onion, chopped garlic, diced potatoes, and squash. Let cook for 3 to 4 minutes, then add enough water to cover, salt, and chili. Cook for 20 to 25 minutes: the potatoes and squash should be cooked.
Cooking the gratin In a baking dish, or individual dishes; pour the mixture of potatoes and squash. Add the milk, a little pepper, and the cheese on top. Bake for 25/30 minutes.
