A very enjoyable dish, full of flavors, highly appreciated by my guests.
Start by cutting all the vegetables into julienne (thin strips), along with the ginger.
Brown the tofu cut into thin slices in a little olive oil. Set aside.
Cook the onion with a little oil alone, then add the raw carrots and ginger. Mix well and add the other vegetables. Stir with a wooden spoon, let it cook gently for 3 minutes, then crumble in half a cube and pour in a little water (1 cup).
Sprinkle with chopped basil. Mix and let reduce gently over low heat.
When the vegetables are cooked, plate with the lightly warmed tofu slices and mix with the vegetables.
