 100 Type 55 flour
 50 oat flour
 60 almond puree
 1 Lemon juice
 4 Baking powder
 1 lemon zest

Mix the flours, juice, sweetener, zest, and puree in a mixing bowl. You should achieve a crumbly texture.

Make a well in the middle of the mixture and then add the egg white. Mix until a ball forms.

Cover the dough with plastic wrap or a silicone lid and let it rest for 20 minutes in the refrigerator.

Preheat the oven to 180°C.

Shape about ten balls. Flatten them a little.
