For the whipped cream: Pour the cold liquid cream into the container, and beat for 1 minute. Mix the powdered sugar and vanilla sugar, then add them when the cream starts to foam. Beat the cream vigorously for about 7 to 10 minutes. When you see soft peaks, the whipped cream is ready.
For the caramel: Then melt 50g of sugar in a saucepan over medium heat. When it turns amber.
To finish assembling the dessert: Place pieces of mango at the bottom of each serving glass. Cover with whipped cream, add some crushed plain madeleines, then a second layer of whipped cream. Finally, add caramel on top and a few small pieces of madeleines.
