Very simple to make even with children, and delicious!
Preheat your oven to 180 °C.
Clarify the eggs and set the yolks aside.
Beat the egg whites until stiff peaks form. Once firm, add the sugar and continue to beat the mixture. Then add the egg yolks until fully incorporated (this is quite quick).
Gently fold in the flour with a spatula to avoid overworking the mixture.
Distribute into molds (one half tablespoon) and bake for 12 minutes at 180°C. With this quantity, you will get two trays of 15 portions each.
To finish, once out of the oven, press the tart shells using an oval pressing tool. Unmold and let cool on a rack. Add strawberry jam, chocolate ganache, or salted butter caramel into the cavities of the tart shells.
