Soak the gelatin sheet in a bowl of cold water.
Separate the egg white from the yolk. Whip the egg white until stiff peaks form. Using a rolling pin, crush the 4 cookies to obtain crumbs.
Squeeze out the gelatin and dissolve it in a saucepan over low heat. Turn off the heat, add the yogurt, and mix. Transfer to a mixing bowl. Incorporate the egg yolk and agave syrup, and mix. Using a spatula, gently fold in the whipped egg white into the yogurt mixture. Add the cookie crumbs and stir gently.
Fill each cup with yogurt mousse topped with red fruits and sprinkle with sesame seeds. Place in the refrigerator for 2 hours.
At the time of serving, accompany the small glasses with vanilla sesame cookies.
To finish Seasonal tip The flavors of vanilla and sesame pair wonderfully with many fruits! Feel free to replace the berries with small cubes of juicy fruits: nectarines, apricots, pears, kiwis, mango...
