I present to you my vegan version of an iconic recipe from the United States: banana bread! It is a banana cake that can be enjoyed at breakfast or as an afternoon snack.

Yields6 Servings
Prep Time15 minsCook Time50 minsTotal Time1 hr 5 mins
Ingredients
3 very ripe bananas, one for the top
 160 plant-based milk
 200 flour
 100 almond powder
 70 brown sugar
 ½ baking powder
 1 pinch salt
 100 optional chocolate chips
Directions
1

Preheat the oven to 160°C, then grease and line the bottom of a 20 cm loaf pan with parchment paper (this will make it easier to unmold).

2

In a container, mash the two bananas with a fork, add the milk, and mix well.

3

In another bowl, mix the flour, almond powder, sugar, baking powder, salt, and 85 g of chocolate chips, then add everything to the previous mixture.

4

Quickly mix everything together without overworking the dough.

5

Pour the mixture into the loaf pan, slice the remaining banana lengthwise, arrange it nicely on top, and then sprinkle the remaining 15 g of chocolate chips.

6

Bake for about 40 minutes to 1 hour (the time may vary depending on the oven), regularly check the doneness with the blade of a knife; it should come out clean (if not, extend the cooking time).

7

Allow the cake to cool for a few moments before removing it from the mold.

8

Finally, depending on your preference, you can either enjoy it warm or cover it (just after unmolding, when it is still warm) and let it cool completely in its packaging at room temperature (with this method, you will achieve an incomparably moist cake!).

Excellent recipe! My loaf pan measures 29 cm, so I increased the proportions by a third. Instead of almond flour, I used the equivalent in grated coconut and broke dark chocolate into pieces since I didn't have any chocolate chips. A definite success!

    Perfect.

Excellent - you can reduce the sugar to 50 grams since the banana adds a lot, but it is perfect! And healthy for children :) thank you.
