I present to you my vegan version of an iconic recipe from the United States: banana bread! It is a banana cake that can be enjoyed at breakfast or as an afternoon snack.
Preheat the oven to 160°C, then grease and line the bottom of a 20 cm loaf pan with parchment paper (this will make it easier to unmold).
In a container, mash the two bananas with a fork, add the milk, and mix well.
In another bowl, mix the flour, almond powder, sugar, baking powder, salt, and 85 g of chocolate chips, then add everything to the previous mixture.
Quickly mix everything together without overworking the dough.
Pour the mixture into the loaf pan, slice the remaining banana lengthwise, arrange it nicely on top, and then sprinkle the remaining 15 g of chocolate chips.
Bake for about 40 minutes to 1 hour (the time may vary depending on the oven), regularly check the doneness with the blade of a knife; it should come out clean (if not, extend the cooking time).
Allow the cake to cool for a few moments before removing it from the mold.
Finally, depending on your preference, you can either enjoy it warm or cover it (just after unmolding, when it is still warm) and let it cool completely in its packaging at room temperature (with this method, you will achieve an incomparably moist cake!).
