It's the end of the week, so I propose a nice little pear cake to share with family or friends. It has a slightly crunchy crust and a soft, crumbly crumb, with melting pieces of pear.
Preheat the oven to 180°C, static heat.
Grease the edges of an 18 cm round mold and line the bottom with parchment paper.
In a bowl, mix the eggs with the sugar and salt for 5-8 minutes or until they triple in volume.
In a separate bowl, mix the flour, baking powder, and cinnamon. Add to the liquid ingredients in three parts, mixing on low speed briefly between each addition to combine.
Add the melted and cooled butter in two parts, then the milk, and mix each time a little until a smooth texture is achieved. The final mixture is quite thick.
Pour the batter into the mold and smooth the surface.
Peel the pears, remove the seeds, and cut them into quarters. Place the fruit pieces on the dough, with the center side facing down, pressing them in slightly. Sprinkle with brown sugar.
Bake for 45-50 minutes or until the knife comes out clean.
Let it cool, then unmold onto the serving dish.
To finish, sprinkle with powdered sugar before serving.
