 1 Baking powder
 50 Coconut

Preheat the oven to 180°C (350°F).

In a mixing bowl, cream together the butter and sugar. Add the eggs, flour, baking powder, coconut, and milk.

Butter a cake pan and bake for 45 minutes.

    Excellent. To enhance the coconut flavor, I suggest using coconut milk instead of regular milk. Another variation is to replace the grated coconut with the juice and zest of a lemon while keeping the same base.

    coconut cake really moist and airy. My suggestion: with a warm chocolate glaze and coconut, it's perfect.
